Vegan Chili Fries

Vegan Chili Fries Here's an awesome vegan recipe from a fellow veggie!

feeds: 4-6 people prep time: 15 min cook time 45 min

5 russet potatoes 1 - 28 oz can crushed tomatoes 1 can diced tomatoes 1 can chickpeas 1 can red kidney beans green onion kale 2 cups water 1 cup chopped red pepper 3 chopped celery sticks 1 tsp minced garlic Olive oil Salt, pepper + chili powder

Peel and cut potatoes into desired thickness for fries,  toss in olive oil, salt, pepper, and chili powder.  Bake at 375° for 40 minutes, broil on high for 10 minutes.

While the fries are cooking pour the can of crushed tomatoes, diced tomatoes, water and garlic into a pot. Bring to a boil.

Turn to low and add chickpeas, kidney beams, red pepper, 3 celery sticks chopped. Cook on low until fries are ready.

Pull out and let fries cool once done. Add 4 stocks of chopped kale to chili.

Scoop fries into a bowl and pour chili on top. Sprinkle on green onion and daiya cheese. (optional)
